Breakfast of Champions

My girlfriend made me a breakfast sandwich the other day which struck me as a true “breakfast of champions,” because it’s so damn delicious. A toasted english muffin, with a spread of sheep/goat cheese, topped with sliced avocado and thinly sliced smoked salmon, and a squirt of lemon juice. Oh my, when I took my first bite, I was in heaven.

One of the keys is the cheese: the brand name is Meredith Dairy, and it’s called “Farmstead Sheep & Goat Cheese” – it’s the first product posted on this page. My girlfriend and I both call this “crack cheese,” because it’s so addictive, it’s like crack – not that I know what crack is like, but you get the idea.

I first encountered this “crack cheese” at a cheese shop in Cold Spring, NY. Spreading a little on crackers, or on sourdough toast – or just about anything – is heavenly. The fact that it’s marinated in olive oil, you get a little of that into the mix when you spread it, it’s so good. I later learned that it is available at Wegmans, so it saved me the trouble of driving back to the mom-and-pop cheese shop in Cold Spring to get more. Meredith Dairy also has a “where to buy” interactive map on their site, so you can look for it wherever you are. But, it is somewhat expensive – it’s $13 for an 11 oz. jar – so I tend to treat it like gold and ration it out and try to make it last.

At any rate, back to this breakfast sandwich – it was so good, I went out and bought the ingredients to take home with me in order to make it at my place. I gave it a shot today, with the only difference being that rather than plain smoked salmon, I had smoked salmon with dill, and it was just as good. Give it a shot – you’ll be hooked!
